What is the difference between ultra high performance and grand touring tires?

I have a 2005 honda accord coupe ex 4cyl. I understand my car is not a racing car and I dont plan on using it.

I am looking for a set of all season tires. I am currently living in michigan and would like tires that have the least hydroplaning in snow/rain, but at the same time would like to use them year round. I am trying to decide between Pirelli Cinturato P7 plus or the Dunlop Signature HP
Added (1). On tirerack.com they have different options for all season tires. Theres ultra high performance all season and then grand touring all season. The websites doesn't do the greatest job in differentiating the different types. If anyone can explain the difference between these two types that would be awesome! I don't care about price, but I also don't want to buy separate snow tires.
