Taking apart a motorcycle engines. What should i Know?

I have a 79 honda cb750 and i took the engine out of the frame in hopes of replacing some gaskets. If i take apart the engine and put it back together all in the same order will everything potentially be ok? Is there anything i should know? Any other details would be helpful?
